For an extra-tasty kick, choose peppery-tasting greens such as arugula, watercress, or radicchio instead of mild iceberg or leaf lettuce. To spiff up sandwiches even more, add several different greens with varying colors, tastes, and textures. For example, team red or pink savoy (flowering kale) with butterhead (Boston or Bibb) lettuce and spinach or sorrel.
