Use an instant-read thermometer to monitor the internal temperature of your chops. When cooked to 160°F, the chops should still be moist and slightly pink in the center. The cooking method is important also for keeping chops moist. For loin chops, grilling, broiling, or skillet-cooking are the best methods.
