Sometimes meat or poultry is pounded to make a uniform thickness for even cooking or to make it thin enough to roll. Place meat in a zip lock bag. The meat can be pounded with the smooth side of the mallet or the bottom of a heavy skillet pounding meat also breaks down tough fibers making it more tender.
