The best way to manage a mango is to start by looking at its shape. See how it has a broad, flat side? That shows you the shape of the seed inside.
1. Using a sharp knife, slice all the way through the mango next to the seed.
2. Repeat on the other side of the seed, resulting in two large pieces of fruit.
3. Cut away all the fruit that remains around the seed.
4. Remove the peel, and slice, chop, or puree the fruit.
