Take a few minutes in the supermarket's produce section and inspect each vegetable before you buy. Look for plump, crisp, bright-colored vegetables that are heavy for their size (this indicates moistness). Avoid vegetables that are bruised, shriveled, moldy, or blemished. Follow these guidelines for selecting and storing fresh vegetables. In most cases, wash vegetables just before using. (For more selection information, download chart below.
