Flavoring with Dried Mushrooms

Dried mushrooms are a simple way to add a rich, earthy, aromatic flavor to recipes.

You can use the soaking liquid to add even more flavor to dishes.

Instructions:

1. Most dried mushrooms need to be covered with hot water, broth, or wine and allowed to stand about 15 minutes before they're ready to use.

2. Once the mushrooms have soaked, strain the liquid through a strainer lined with cheesecloth, paper towels, or a coffee filter to remove any grit.

3. Use the strained liquid to make risotto, as a substitute for stock in soup, or to make a sauce for pasta.
