The more common Hachiya persimmon is large, acorn-shaped, soft when ripe, and very sweet. The Fuyu tends to be smaller than a hachiya, rounded, and crisp like an apple.
Choose brilliant, smooth-skinned persimmons that have green caps. Hachiya persimmons can be soft, but the fuyu persimmons are firm.
Allow fresh hachiya persimmons to ripen at room temperature. They will become soft to the touch when ripe. The fuyu persimmon will remain firm. Refrigerate persimmons. Or, you can wrap ripe persimmons in freezer wrap and freeze them for up to 3 months.
