Super-fresh and easy, this vitamin-rich dish gets a boost of protein from edamame (young soybeans). "Tossed with corn and tomatoes, this warm salad works as a side dish for my carnivorous husband and as a main for my vegetarian guests," says Ellie.
Melted bittersweet chocolate coats toasted almonds and dried cherries for a guilt-free dessert. "I like to bookend my day with chocolate -- I make the clusters in the morning and have them for dessert in the evening," says Ellie.
