Making perfect risotto is easy if you follow these rules:
Pick the right rice. Arborio rice is ideal because it is high in starch -- which contributes to the creamy quality of risotto -- and it absorbs a lot of liquid without losing its shape.
Stir constantly. Stirring is important because it keeps the rice from sticking and helps the rice absorb the hot liquid evenly.
