Parsley is used as a seasoning and a garnish.
There are two types: curly and Italian (or flat-leaf) parsley. Curly-leaf parsley is the most commonly available. It has ruffled leaves and a fresh, slightly peppery flavor. Italian parsley has flat, dark green leaves and a milder flavor.
Dehydrated leaves, called parsley flakes, also are available.
When selecting fresh parsley, look for bright green, unwilted leaves.
Wash the parsley leaves and shake off the excess moisture. Wrap in paper towels and refrigerate in a plastic bag for up to 1 week.
