Parsley

Definition:

A decorative herb with bright green leaves.

Common Uses

Parsley is used as a seasoning and a garnish.

Types

There are two types: curly and Italian (or flat-leaf) parsley. Curly-leaf parsley is the most commonly available. It has ruffled leaves and a fresh, slightly peppery flavor. Italian parsley has flat, dark green leaves and a milder flavor.

Forms

Dehydrated leaves, called parsley flakes, also are available.

Selecting

When selecting fresh parsley, look for bright green, unwilted leaves.

Storing

Wash the parsley leaves and shake off the excess moisture. Wrap in paper towels and refrigerate in a plastic bag for up to 1 week.

Q\A:

Q: Is there a way to save wilted parsley?

A: Revitalize wilted parsley by cutting the stems and standing the parsley in cold water for about an hour.
