Nutmeg is the seed of the fruit of the nutmeg tree. When the fruit is ripe, it splits open and reveals a seed that's covered with what looks like red lace. This fragile, red skin (mace) is removed before the nutmeg is dried. The brown, oval nutmegs are usually about an inch in length and have wrinkled surfaces. When grated, a slightly sweet and spicy aroma is released.
Most nutmeg is sold ground, but whole nutmeg is available for grating.
Cinnamon, ginger, or mace
To guarantee that you are using fresh spices, buy them in small quantities and date them. Replace old spices once a year.
Store tightly covered in a cool, dark place. Generally, whole spices have a longer shelf life than ground spices--whole spices stay fresh up to 2 years and ground spices about 6 months.

A: Judge the freshness by the color and aroma. When fresh, most spices have a bright, rich color and a strong aroma when you open the container. If either the color or the aroma seems weak, replace the spice.
