A dark, reddish brown spice with a strong, spicy-sweet flavor and aroma. Cinnamon is actually the bark of a tropical evergreen tree. When the bark is left to dry, it rolls up into tight curls, called cinnamon sticks. The sticks are pulverized to make ground cinnamon.
Cinnamon is available year-round.
Cinnamon sticks, ground cinnamon, and oil of cinnamon.
Nutmeg or allspice, but use only one-quarter of the amount.
Store tightly covered in a cool, dry place.
Cinnamon sticks have a shelf life of up to 2 years, while ground cinnamon should be discarded after 6 months.
