Cheddar cheese is a mild- to sharp-flavored natural cheese. Cheddar is made from cow's milk and has a white to orange color.
The word cheddar also refers to a step in the cheese-making process. Cheddaring is when the curds are pressed into slabs to form cheese. Then the slabs are turned repeatedly to condense the cheese and give it a smoother, firmer texture.
Cheddar cheeses are classified by age. The longer a cheddar ages, the sharper its flavor.
Mild: Aged about 3 months
Medium: Aged about 6 months
Sharp: Aged 6 months or more
Cheddar is sold shredded, in wheels, and in chunks.
Some is coated with wax, which should be removed before eating.
Airtight packaging is the key to keeping cheese fresh. If the cheese has a rind, leave it on during storage. Wrap unused cheese tightly in foil or plastic wrap, then seal it in a plastic bag or container with a tight-fitting lid. Store cheese in the refrigerator.
