Lemongrass Chicken & Rice Noodles
- Fresh ginger adds a slightly hot, spicy flavor and fragrant aroma that is hard to resist. Working with it is easy.
- To peel fresh ginger, cut off one end of the root and peel with a vegetable peeler, moving down the root.
- If a recipe calls for grated fresh ginger, the grater you use should have fine openings.
- If a recipe calls for minced ginger, it's best to mince it by hand. If you try to mince ginger in a food processor, you'll end up with lots of unappetizing little strings and fibers. To mince the root, slice the peeled ginger with the grain (lengthwise) into think sticks. Stack the sticks in a bundle and cut them finely.
