Red Snapper with Orange-Ginger Sauce is an entree and salad in one. Served with Spinach Ramen, Glazed Carrots, and Ginger-Orange Sundaes, it's a delicious meal. Ramen noodles are really a time-saver -- they cook much more quickly than regular pasta, and you can add any vegetable to the mix for an easy side dish.
Cook ramen according to package directions. When cooked, stir in thinly sliced spinach. The spinach will cook immediately -- no need to keep it simmering.
Cook equal parts butter and brown sugar in a saucepan. Add cooked carrots, and cook 2 to 3 minutes over medium heat. Season to taste.
Top scoops of chocolate ice cream with mandarin oranges and finely minced crystallized ginger. Drizzle with chocolate sauce if desired.
