Sauteed Garlic-and-Herb Shrimp Dinner

Garlic-and-Herb Shrimp Saute takes on an Italian twist when paired with side dishes that use two different types of pesto -- basil and sun-dried tomato. Panko Broiled Tomatoes are made with the red variety, Pesto Brown Rice with the green. Garlic Broccolini is just another vegetable that's Italian to go along with everything else. The panko, once available only to chefs, are breadcrumbs from Japan. They stay crisp and crunchy on the tomato. You should be able to get them at most markets these days.
Cut tomatoes in half, microwave 1-2 minutes to heat through. Top with panko breadcrumbs mixed with sun-dried tomato pesto to taste. Broil to heat through and crisp.
Stir prepared basil pesto into hot brown rice.
Place olive oil and crushed garlic in a large bowl. Heat in microwave for 30 seconds. Toss in cooked broccolini; season to taste.
