Broiled Lobster Tails with Garlic-Chili Butter elevate any night into a party. Add Chipotle-Orange Onion Salad, Mango-Lime Rice, and Sweet Pea and Asparagus Saute to round it out. The menu is so festive you might want to break out the margarita mix to go along with it!
Segment oranges over a bowl to catch juice. Thinly slice red onion and 1 or 2 green onions. Make a dressing with reserved juice: For each tablespoon juice, add 3 tablespoons olive oil and salt and chipotle hot pepper sauce to taste. Toss oranges, onions, and watercress with dressing.
Stir diced mango and lime juice to taste into hot rice.
In a large skillet, saute thinly sliced asparagus until just cooked, about 4 minutes. Stir in fresh or frozen peas and a bit of chicken broth. Cook until peas are cooked, stir in butter, and season to taste.
