Boiled Lobster may seem too special for any old day of the week, but it's easy, so why not? The most time-consuming part of this meal is waiting for the water to boil! Add Yogurt Dill Twice-Baked Potatoes, Corn on the Cob, and Celery Slaw and you¿ve got a meal fit for the pier. Pick up deli slaw to make a quick salad. If you're lucky, they may even steam the lobsters for you at your local market.
Bake or microwave russet potatoes. Scoop potato into a bowl, stir in plain yogurt, butter, and chopped dill, and season to taste. Fill potato skins with potato mixture and bake to heat through.
