Salmon-Vegetable Bake Dinner

Salmon-Vegetable Bake is really fun to eat, because it goes on the plate in the packet it was cooked in: Kids love that kind of thing. Give it a try -- anything to get kids (or anyone) to eat more healthy fish! Add Artichoke Romaine Salad, Sun-Dried Tomato Rice, and Lemon-Parsley Roll-Ups for a simple meal that will appeal to everyone in the family.
Toss drained marinated artichokes with romaine salad blend. Add a bit of artichoke liquid to salad dressing if desired.
Stir sun-dried tomato pesto into water or broth used for cooking rice: 1 Tbs. per 1 cup dry rice. Cook as directed on rice package.
Sprinkle a pinch of lemon-pepper and some chopped parsley on refrigerated crescent roll dough before rolling. Roll and bake as directed on package.
