Maple-Smoked Salmon Fillet with Pecan Wild Rice, Broccoli and Red Pepper, and Lemon Cookies is a very Pacific-Northwest-type meal. Hot smoked fish is a real treat, one you don't get that often unless you make it yourself. Make it easy with packaged rice, a simple broccoli dish, and just cookies for dessert.
Stir chopped pecans into a package of wild rice blend, prepared according to package directions.
Steam fresh or frozen broccoli. In a large skillet, cook diced red pepper in olive oil. Add cooked broccoli, toss together, and season to taste with salt, pepper, and a pinch of sugar.
