Tilapia with Almond Butter Dinner

This simple fish dish, Tilapia with Almond Butter, is easy and elegant at the same time. Add Lemon Rice, Roast Zucchini, and a Fruit Salad for an easy weeknight meal. You may want to serve it to guests on the weekend, too. Look for precut fruit in the produce aisle. In the winter, bags of frozen fruit will do in a pinch.
Stir lemon juice and a pinch of grated fresh lemon rind into hot rice.
Cut zucchini in chunks, toss with olive oil, and spread on a cookie sheet. Sprinkle with salt, pepper, and Italian herbs. Roast in the oven at 375 degrees F. for 35 minutes or until cooked and browned.
