Shrimp Scampi Dinner

Make weeknight dinner fast and easy. Here's a main course recipe and three suggestions for rounding it out into a complete meal. Find out how to effortlessly dress up starters, sides, and desserts to fit the meal's main course.

The Menu

Shrimp Scampi is so popular at restaurants that we just had to create one for all home cooks. Like many dishes chefs cook, it takes just minutes to get to the table. By adding Basil Roasted Tomatoes, Grilled Broccoli, and Lemon Fettuccini, you can give your family a real Italian trattoria dinner in your own dining room. Be sure to roast the tomatoes before broiling the shrimp.

Basil Roasted Tomatoes

Crush seasoned croutons and mix with chopped fresh basil. Cut tomatoes into thick slices and place on a foil-lined cookie sheet. Sprinkle with seasoned crumbs, drizzle with olive oil and bake 10-20 minutes at 350 degrees F.

Grilled Broccoli

In a large glass bowl, toss together broccoli, olive oil, salt, pepper, and Italian spice blend to taste. Microwave for 3 minutes. Grill 3-4 minutes in a countertop grilling machine.

Lemon Fettuccini

Toss cooked fettuccine with butter, lemon, and minced chives if desired.
