Fried Soft-Shell Crabs Dinner

Fresh Fried Soft-Shell Crabs are a true seasonal treat, since they are only available fresh for a few months of the year. Serve them with Creole Roasted Potatoes, Grilled Asparagus, and Maple Brown Sugar Glazed Pound Cake for a meal with real Southwestern flair. Stand back and keep the kids away from the stove when you're frying the crabs -- moisture in them can make the oil pop.
Heat oven to 375 degrees F. Cut unpeeled red potatoes in chunks, coat with olive oil, and sprinkle with Creole seasoning. Spread on a cookie sheet and roast until golden brown, about 25 minutes.
Cook asparagus in boiling salted water for 1-2 minutes. Drain and toss with oil just to coat. Season to taste and grill in a countertop grilling machine for 3-4 minutes.
Combine equal parts butter, brown sugar, and maple syrup in a sauce pan. Bring to a boil and cook 2-3 minutes. Drizzle on slices of pound cake.
