Mexican-inspired Cilantro-Lime Orange Roughy is a 15-minute entree. Start this meal with Southwestern Soy Nuts; add the fish, Orange Texmati Rice, and Mango-Salsa Green Beans and you have a well-rounded dinner. Mango Salsa, soy nuts, and orange juice concentrate are three convenience products to keep on hand. They make dinner an easy task.
In the microwave, heat soy nuts with 1 tsp. of olive oil and a sprinkle of taco seasoning just until hot.
Stir 1 Tbs. orange juice concentrate into broth or water for cooking 1 cup rice. Cook as directed.
Cook green beans and toss with mango salsa. Serve warm.
