- Chicken Cordon Bleu (see recipe below)
- Arugula and White Bean Salad with Red Pepper Dressing
- Lemon-Herb Fettuccine
- Hazelnut Green Beans
Chicken Cordon Bleu is a thin chicken breast stuffed with ham and cheese. This French dish gets an Italian makeover with Arugula and White Bean Salad with Red Pepper Dressing, Lemon-Herb Fettuccine, and Hazelnut Green Beans. Since it has an Italian theme, use the prosciutto called for in the recipe in place of the ham.
In a blender, puree equal parts roasted red pepper and balsamic vinaigrette. Toss with arugula, then sprinkle with rinsed and drained canned white beans.
In saucepan, melt butter and stir in chopped parsley, a pinch of Italian seasoning, and a squeeze of lemon juice. Toss with cooked fettuccine.
Toss cooked green beans with butter and toasted chopped hazelnuts.
