Tex-Mex Speedy Skillet Dinner

Tex-Mex Skillet is a one-pot dinner that is on the table in 20 minutes. Add a few Mexican-style sides, like Guacamole and Chips, Jicama and Orange Salad, and Refried Beans and it's a complete weeknight fiesta. Canned refried beans and containers of frozen guacamole are always good to keep on hand, even if you're just fixing tacos.
Serve a container of guacamole with chips. Stir extra tomato into guacamole if desired.
Cut jicama into thin strips; toss with orange sections and thinly sliced green onion. Dress with olive oil and orange juice dressing: Mix 3 parts oil to 1 part orange juice; taste and correct seasoning with salt, pepper, and cider vinegar if needed.
