Mexican Tamale Pie Dinner

Corn bread mix is the topping for this tasty Two-Bean Tamale Pie casserole. Start your dinner with Grilled Chipotle Shrimp, and serve Cilantro Corn Salad and Cumin Roasted Cauliflower with the pie. The cauliflower roasts in the oven with the pie to make things easy and efficient. If you want to make this meal completely vegetarian, substitute tofu or tempeh for the shrimp. It will be just as good with the spices called for.
Toss peeled shrimp with oil and a few dashes of chipotle pepper sauce. Cook on a grill or on a countertop grilling machine.
Stir chopped cilantro into drained canned corn. Add minced red onion and salsa to taste. Serve in a lettuce cup.
Heat oven to 400 degrees F. Cut cauliflower into small pieces, toss with vegetable oil, and sprinkle with a mixture of salt, pepper, and cumin. Roast on a cookie sheet until golden brown and tender, about 35 minutes.
