Mushroom Stroganoff will make any vegetarian happy: The mushrooms make this dish so hearty. Garlic Peas, Roasted Cauliflower, and Almond-Topped Brownies all add to a memorable meatless meal. The brownies and cauliflower can bake at the same time -- just start the cauliflower first, as it will take longer.
Heat 2 tsp. vegetable oil with 2 cloves fresh minced garlic in the microwave for 30 seconds. Toss with frozen peas cooked according to package directions.
Trim a head of cauliflower and cut into small pieces. Toss with olive oil, salt, and pepper, and spread on a cookie sheet. Bake in a 350-degree oven until tender and browned.
If brownie directions call for a temperature other than 350 degrees, roast cauliflower at the temperature the brownies require.
