Cream-Sauced Pasta with Vegetables is a great option for a meatless meal. Add Pepper-Olive Toasts, Honey Nut Salad, and Chocolate-Dipped Biscotti for variety and ease. Look for packages of honey-roasted nuts to toss into salad any night.
Slice French or Italian bread; brush with olive oil and bake until toasted. Puree roasted red pepper and add chopped olives after it is pureed. Spread on warm toast.
Tender Boston lettuce is a great contrast with the crunch of honey-roasted nuts. Any vinaigrette dressing will be good.
Dip biscotti or any hard cookie in melted chocolate. Place on wax paper and refrigerate to harden chocolate.
