Easy Seafood Pasta Dinner

Make weeknight dinner fast and easy. Here's a main course recipe and three suggestions for rounding it out into a complete meal. Find out how to effortlessly dress up starters, sides, and desserts to fit the meal's main course.

The Menu

Pasta with White Clam Sauce is a terrific 30-minute main course. Spinach Salad with Sun-Dried Tomato Vinaigrette, Rosemary Scones, and Ginger Pear Tarts complete this Italian-inspired dinner. Start the scones first, and bake while the rest of dinner is being prepared. Grab some premade vanilla pudding for the tarts.

Pasta with White Clam Sauce

Spinach Salad with Sun-Dried Tomato Vinaigrette

In a blender, puree drained, sun-dried tomatoes with your favorite oil and vinegar Italian dressing. Three pieces of tomato per 1/4 cup of dressing is a good ratio to follow.

Rosemary Scones

Stir 2 or 3 pinches of crushed dry or minced fresh rosemary into the amount of all-purpose baking mix called for on the package for making 1 batch of rolled biscuits. Bake as directed.

Ginger Pear Tarts

Sponge shells are usually found in the produce department. Spread a bit of vanilla pudding in each; top with sliced pears and a sprinkle of minced candied ginger. (You can stir some ginger into the pudding if you'd like a lot of sweet-spicy flavor.)
