Easy Seafood Pasta Dinner

Pasta with White Clam Sauce is a terrific 30-minute main course. Spinach Salad with Sun-Dried Tomato Vinaigrette, Rosemary Scones, and Ginger Pear Tarts complete this Italian-inspired dinner. Start the scones first, and bake while the rest of dinner is being prepared. Grab some premade vanilla pudding for the tarts.
Pasta with White Clam SauceIn a blender, puree drained, sun-dried tomatoes with your favorite oil and vinegar Italian dressing. Three pieces of tomato per 1/4 cup of dressing is a good ratio to follow.
Rosemary SconesStir 2 or 3 pinches of crushed dry or minced fresh rosemary into the amount of all-purpose baking mix called for on the package for making 1 batch of rolled biscuits. Bake as directed.
Ginger Pear TartsSponge shells are usually found in the produce department. Spread a bit of vanilla pudding in each; top with sliced pears and a sprinkle of minced candied ginger. (You can stir some ginger into the pudding if you'd like a lot of sweet-spicy flavor.)
