Spicy Chicken Soup
Coconut Rice with Mango
Start this Thai-style dinner with Spicy Chicken Soup, then move on to an entree of Thai Pork and Vegetable Curry served with Rice Noodles. (The pork recipe calls for orzo; skip it and use the rice noodles instead.) Coconut Rice with Mango is a classic Thai dessert, but rather time-consuming. Try this quick version, ready in minutes.
Bring chicken broth to a boil. Add dashes of lime juice, fish sauce, and some hot sauce. Stir in bite-size pieces of chicken breast; cook 1 minute. Stir in fresh cilantro and mint if desired.
Cook rice or bean thread noodles according to package directions; serve with curry.
Stir some salt and cream of coconut (such as Coco Lopez) into hot cooked rice. Serve with pieces of mango.
