Classic Pad Thai Dinner

Sweet, salt, acid, and spice are the four flavors that characterize any Thai dish, and this Chicken Pad Thai is no exception. Round out this Asian meal with Asian Slaw, Ginger Snow Peas, and Pineapple with Toasted Coconut. Coconut out of a bag is easily toasted on a cookie sheet in the oven -- just watch it carefully to be sure it doesn't burn.
Dress a bag of slaw mix with Asian ginger Sesame dressing; garnish with sliced green onions.
Heat 2 tsp. vegetable oil with 1/2 tsp. grated fresh ginger in the microwave for 30 seconds. Toss with steamed snow peas.
Fresh or canned pineapple chunks are topped with toasted coconut for a sweet-crunchy quick dessert. For the kids, try putting the pineapple on skewers -- they'll love it.
