If you have lactose tolerance issues WHOLE milk is the best for you because it has the least lactose.

I have one of those little 2 cup smoothie makers with 1/2 cup measurements. It makes it so easy to make smoothies, no actual measuring. I use frozen fruit, fat free milk and yogurt, and depending on the flavor, frozen oj concentrate, ground flaxseed, buckwheat honey, and either dark chocolate or french vanilla Carnation instant breakfast. I aim for nutrient dense, medium calorie, meal substitute, that are a lot like a not particularly healthy shake, and just as yummie.

That really depends on what your using the evaporated milk for. You may be able to use sweetened soy milk in some recipes.
