What You'll Need:

  • Your favorite cake or cupcake recipe (pictured: Chocolate-Lover's Cake recipe)
  • Buttercream Frosting recipe
  • Madeleine Cookie recipe or store-bought madeleine cookies
  • Muffin tin
  • Cupcake liners
  • Piping bag or gallon-size resealable plastic bag
  • Coupler (to attach the decorating tip)
  • Grass or fur decorating tip
  • Candy pieces
  • Purchased candy eyes

Instructions:

Bake cupcakes according to the recipe directions. Using a serrated knife, cut off the top of each cupcake.

Pull the original cupcake liner off each cupcake and discard. Place the cupcakes, top side down, onto new cupcake liners, such as lime green liners to create the appearance of grass.

Prepare the Buttercream Frosting using the recipe directions above. Make sure to sift the powdered sugar when making the frosting to avoid lumps -- these will clog your decorating tip. Assemble your piping bag with the coupler and the decorating tip. (If you're not sure how to assemble your piping bag, get a few handy tips here.) Fill the piping bag with the Buttercream Frosting.

Tip: For easy filling, place your piping bag in a wide-rim glass and drape the top edges of the bag over the glass rim. Spoon the frosting into the opening until the bag is full.

To create the fur for the bunny, hold your bag at a 90-degree angle to the cupcake. The tip should be slightly (1/16 of an inch) away from the surface of the cupcake. Working from the bottom up and with consistent pressure, squeeze and pull the bag away to create the desired fur length in each spot.

Finish frosting the sides of the cupcake before filling in the top. Keep the frosting clumps close together to avoid any holes. Continue until the entire cupcake is covered.

For the ears, cut a Madeleine Cookie into thirds with a serrated knife. Use the two outside pieces for the ears; the middle portion can be eaten or discarded. Cut a round red candy in half for the bunny's nose. Press purchased candy eyes into the frosting to finish the cupcake.
