Preparing Pans for Quick Breads

To get quick breads and muffins out of their pans easily, prepare the pans before you pour in the batter.

Double Apricot Bread
Take the time to prepare the pan
before baking so your bread looks
as good as it tastes.

Grease the pans lightly but carefully, making sure to grease the corners, too. For nicely rounded tops rather than ledges around the edge of your loaves or muffins, grease only the bottom of the pan and 1/2 inch up the sides. The batter will then cling to the sides of the pans instead of sliding down during baking. Cool breads or muffins in the pans after they're baked so the steam that accumulates as the breads cool will help release the breads from the pans. Cool muffins 5 minutes and quick bread loaves 10 minutes before removing them.
