Freezing Candy
For longer storage, candy may be frozen. This is especially convenient when planning for the holidays.
Fudges, pralines, and caramels freeze well. Even chocolate-covered candies freeze successfully.
To freeze pan-shaped candies, remove candy from pan; place in an airtight freezer bag or container.
Chocolate-covered candy that is boxed and ready for a gift can be frozen. Just wrap the box in moisture- and vapor-proof wrap or place in an airtight freezer bag.
To freeze popcorn balls, first wrap the balls individually in clear plastic wrap, then place them in an airtight freezer bag.
When removing candy from the freezer, let it stand several hours to warm to room temperature before opening or removing the wrapping. This will prevent moisture from collecting on the surface of the candy and causing white speckles or gray streaks.
