Pepper-Lime Chicken, Mexican Rice, Salsa Beans, and Mexican Grilled Pineapple are a weeknight fiesta waiting to happen. The chicken recipe makes 6 servings. Make it all and save some for other recipes calling for cooked chicken, and have two dinners taken care of with minimal effort. Try the dessert with canned pineapple -- it really saves time.
Stir salsa, chopped cilantro, and sliced green onion into cooked rice. For a super-quick side, use a pouch of cooked rice.
Rinse and drain canned black beans. Stir in salsa, corn, and chopped celery for a crunchy side dish. Serve hot or cold.
Sprinkle pineapple slices or rings with salt, pepper, and a pinch of chili powder. Spray with vegetable cooking spray and grill outdoors or in a countertop grilling machine. Serve plain or with ice cream.
