Beer Can Chicken is not a gimmick -- it really gives you a juicy barbecued whole chicken. Add Salad Greens with Balsamic Vinaigrette, Tomato, Bean, and Green Peppers Saute, and Chive Biscuits to complete the meal. All-purpose baking mix and canned beans are always good to have on hand for easy, quick side dishes.
Toss greens with balsamic vinaigrette.
In a large skillet, heat olive oil and add onions and green peppers. Cook 5-8 minutes, stir in garlic, and cook 1 minute more. Stir in rinsed and drained white beans and diced plum tomatoes. Cook 1-2 minutes more.
Prepare biscuits according to directions on package of all-purpose baking mix, stirring minced chives into dry ingredients. Bake as directed.
