Spicy Buttermilk-Brined Fried Chicken is a Southern-style treat. Add Cooling Buttermilk Slaw, Cilantro Corn on the Cob, and Lemon Meringue Pie to make it a complete meal. The pie is so fast it's even easier than pie -- pudding and meringue kisses in a graham cracker shell.
Stir together equal parts buttermilk and coleslaw dressing; pour over a bag of slaw mix. Season to taste with salt and a pinch of sugar.
Stir chopped cilantro into softened butter; chill. Rub cilantro butter on hot corn.
Prepare two 3-ounce boxes of instant lemon pudding according to package directions; pour into a graham cracker crust. Top with meringue kisses and refrigerate to soften meringues.
