Oven-Fried Parmesan Chicken
Smashed Potatoes with Parsley and Bacon
Cook diced red potatoes with the skins on. While potatoes are cooking, chop a few slices of bacon and cook in a large saucepan until just crisped. Add cooked potatoes and mash. Stir in chopped parsley; season with pepper.
Warm Tomato Salad
Saute washed spinach in olive oil; add a squeeze of lemon juice. Taste before seasoning -- spinach can be naturally salty.
