Avocado, Jicama, and Orange Salad

Peel, slice, and cut jicama into thin strips. Slice avocado and segment oranges. Toss together in a bowl and drizzle with olive oil and a bit of orange juice. Add thinly sliced red onion and cilantro if desired. Be sure to toss gently to keep the avocado from becoming mashed.

Warm Tortillas with Butter

Warm flour and corn tortillas in microwave. Spread with butter and roll.

Mock Flan

Spread a thin layer of caramel sauce in the bottom of a single serving size custard cup or ramekin. Fill with vanilla pudding. Chill, and then serve with fresh fruit if desired.
