Tex-Mex Chicken and Rice Casserole is the perfect dish to take to a potluck dinner or to have at home. The convenience of a casserole is always a time-saver. Peel, slice, and cut jicama into thin strips. Slice avocado and segment oranges. Toss together in a bowl and drizzle with olive oil and a bit of orange juice. Add thinly sliced red onion and cilantro if desired. Be sure to toss gently to keep the avocado from becoming mashed.
Warm flour and corn tortillas in microwave. Spread with butter and roll.
