South-of-the-Border Casserole Dinner

Chile Rellenos Casserole is the focal point of a terrific Mexican-themed dinner. Jicama Salad, Warm Tortillas, and Salsa-Grilled Chicken are everything you need for a fiesta. This menu would also be a fine Sunday brunch for guests. Jarred salsa, packaged tortillas, and preshredded cheese make it all so easy.
Peel and slice jicama, then cut slices into thin matchsticks. Toss together with cilantro and fresh orange sections and drizzle with a dressing of 1 part lime juice to 4 parts vegetable oil.
Warm tortillas in the microwave on half power so they don't dry out. Serve with butter.
Marinate chicken cutlets in salsa, then grill in a stovetop grill, outdoors, or in a countertop grill machine. Discard salsa from marinating. Serve with fresh salsa.
