I very much enjoyed the 3 cheese ziti and smoked chicken casserole! My son who is 20 is a very picky eater. I find it so hard to cook for him. He loved this casserole. I emailed it to many of my friends!

I like these recipes and it is so easy to subsitute other meats and poultry . I also get great ideas for fish, my veggie friends get mini casseroles minus the meat and they rave! I also love how most the recipes can be adapted into smaller portions for my grandchildren and myself. My grandchildren never complain they don't like it!

While I agree the Mediterranean diet is much healthier for you, no one says you have to get all your recipes here, google Mediterranean diet recipes and you will find more than you can ever cook. If you don't like what they are giving you here, unsubscribe from the newsletter.
