Artichoke-Turkey Casserole Dinner

Artichoke-Turkey Casserole is great for the second day after Thanksgiving, when you want something other than turkey sandwiches. Once you've had it, you'll want it all year long, so try it with chicken, too. Adding Cider-Onion Soup, Marinated Mushroom Salad, and Caramel-Dipped Apple Slices makes it a real meal.
Put 3 Tbs. apple cider in the bottom of each soup crock. Add frozen individual onion soup portions and bake as directed.
Toss together equal parts jarred marinated mushrooms and thinly sliced button mushrooms. Drain after tossing together. Add chopped fresh parsley and serve on a bed of greens.
