Italian Tomato-y Chicken Dinner

Chicken Cacciatore, with its rich tomato sauce and vegetables, is often served with pasta. This menu changes it up a bit with a baked Parmesan Polenta casserole and Roasted Squash. Cook both in the oven while the Cacciatore cooks on the stove, and finish the meal with a Quick Coffee Sundae.

Parmesan Polenta

Slice a log of precooked Polenta in 1/2-inch slices and layer in a baking dish with a few table spoons melted better and grated Parmesan cheese. Bake in a 350-degree oven until heated through.

Roast Zucchini Squash

In a large bowl, toss together sliced zucchini, 2 tsp. olive oil, salt, and pepper. Spread on a cookie sheet and bake in a 350-degree oven until soft and lightly browned.

Coffee Sundae

Drizzle vanilla ice cream with syrup made from instant espresso, sugar, and water. Sprinkle with shaved chocolate.
