Italian Chicken Marsala Dinner

The Menu

Chicken Marsala is such a classic you'll want to make it again and again. Make this Italian meal complete with Angel Hair and Garlic, Salad with Parmesan Cheese, and Steamed Broccolini. Pasta with garlic is the easiest side dish you can make: Using a bit of the pasta water is an instant "sauce."

Angel Hair and Garlic

In a large skillet, heat equal parts butter and olive oil just to melt butter. Crush garlic in a garlic press; add to pan and heat just until bubbles form around garlic. Save 1/4 to 1/2 cup pasta cooking water. Add cooked Angel Hair to pan with garlic; add pasta water. Add chopped parsley if desired.

Salad with Parmesan Cheese

Toss green beans with balsamic vinaigrette and top with shaved or shredded Parmesan. To shave Parmesan into strips, use a vegetable peeler.

Steamed Broccolini

Steam broccolini until just tender. Season to taste; add butter or olive oil if desired.
