Quick Chicken and Veggie Taco Dinner

Chicken and Veggie Tacos are a great vehicle for getting veggies into your children's diet. Add Avocado and Tomato Salad and Refried Beans and you're giving them an even healthier meal. Top it off with Lime Sherbet with Toasted Coconut -- a low-fat treat. Spread an entire bag of coconut on a cookie sheet and bake it at 350 degrees F. until toasted. Then store in an airtight container. Having it on hand means you can spruce up dessert any night of the week.
Dice ripe avocado and plum tomatoes. Gently toss together with lime juice, salt, and green onion.
Canned refried beans will be really creamy if heated with a bit of broth and served with a sprinkle of Monterey Jack on top.
