Chicken with Creamy Mushrooms is a true comfort meal. The recipe makes six servings and is a quick and easy dinner. Using a vegetable peeler, shave ribbons of Gruyere cheese from a block. Toss spinach with vinaigrette and top with cheese.
Cook orzo pasta. In large skillet, cook thinly sliced asparagus in equal parts olive oil and butter for 5 minutes. Stir in frozen peas and 1/2 cup pasta water. Add orzo and season to taste.
Cut grape tomatoes in half. Toss with thinly sliced basil and balsamic vinaigrette.
