Chicken Breasts with Tomatillo Salsa is a terrific quick entree to build a Mexican meal around. You can't go wrong with adding Guacamole and Chips, Yellow Rice, and Salsa Bean Salad to round it out. Pick up a container of guacamole, a bag of chips, canned beans, and a package of yellow rice for easy mealtime anytime.
Pick up fresh or frozen guacamole and serve with chips.
Look for packages of yellow rice in the Hispanic section of the grocery store. Add chopped cilantro is desired.
Rinse and drain one can of black beans and one can of white beans. Toss with salsa to taste, adding diced red onions and cilantro if desired.
