Caramelized onions make a deliciously mellow topper for burgers, or a flavorful side dish for meats, poultry, or fish.
1. To caramelize enough onions for 4 to 6 servings, thinly slice 2 large onions.
2. Cook them, covered, in a skillet in 2 tablespoons hot margarine or butter over medium-low heat for 13 to 15 minutes or until the onions are tender. (To make sure the steam stays trapped in the skillet and helps cook the onions during this stage of cooking, uncover the skillet only occasionally to stir the onions.)
3. Uncover the skillet and add 4 teaspoons brown sugar and 1/4 teaspoon salt. Cook and stir over medium-high heat for 5 to 6 minutes or until the onions are golden.
4. It's important to stir continuously so the onions don't stick. Also, don't overcook the onions or they may burn and take on an off-flavor.
